Step 01Receiving

Intake of fresh or frozen raw material, with quality control and thawing when applicable.

Step 02Washing and selection

Washing, weighing and selection prior to cutting according to client specification.

Step 03Cutting and gutting

Head, tail and collar removal, gutting and filleting.

Step 04Trimming and grading

Trimming, pin-bone removal, skinning and product grading.

Step 05Portioning

Portioning and sizing according to the requested format.

Step 06Chilling or freezing

Refrigerated chilling or freezing with vacuum sealing, depending on product destination.

Step 07Packaging

Packaging, labeling and metal detector pass (critical control point).

Step 08Dispatch

Finished product storage and traceable dispatch to destination.
